This deliciously savoury gin is made with locally grown green tomatoes and is especially tasty served with a gherkin garnish. I had to change the process of gin making for this one – the green tomatoes needed handled differently to truly capture the scent and taste of their almost tart green goodness. I borrowed some technique inspiration from the German spirit Geist and the resulting gin is different to all the other gins I have tasted (and I am an utter gin lush, so that’s quite a few!) This is not one for the traditionalists or for the sweet gin lovers – although it is a distilled gin, it doesn’t follow the usual flavour profiles with no hint of citrus or warm spice and instead treads its own path with a nose that I can only describe as richly green and a peppery start mellowing out to a smooth roundness that would almost convince you that gin is one of your five a day! A slice of green apple and a serving of Mediterranean tonic bring out the salad sweet notes, but the perfect serve is a slice of gherkin and some rosemary tonic (a wee sprig of rosemary in standard tonic does the trick if you can’t lay your hands on the premade one). 40% ABV
